Hello there everyone! Long time no blog post I know, so here's an easy one :) I know this is a super random time to post a recipe like this but... I JUST came up with it, it's amazing so I know ya'll will love it, they are healthier than regular pancakes, aaaaannddd who says you can't have piña coladas in November?! ;)
Now all that's missing is the rum! ;)

Alright here's what you will need:
Yes just three ingredients!
1. A buttermilk pancake mix.
2. A small can of crushed pineapple (drained.)
3. A can of Coco Lopez cream of coconut..we prefer the 40% less fat but either will work! :)
Prepare your pancake mix according to your package directions :) then mix in the drained pineapple... (More or less depending on how big a batch of pancakes you're making.)
Next cook yourself a big giant pancake like this one :)
Wait to flip it until you see the bubbles!
Then last but not least serve up your pancakes with the coco Lopez on top instead of syrup! :) (its healthier too!)
